- 5 lbs russet potatoes, peeled and cut into chunks
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups shredded cheddar cheese, divided
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Boil potatoes in a large pot of salted water until tender, about 15–20 minutes. Drain well.
- Mash the potatoes with butter, sour cream, milk, garlic powder, salt, and pepper until smooth and creamy.
- Stir in 1 1/2 cups of the cheddar cheese and most of the crumbled bacon.
- Spread the mixture evenly in the prepared baking dish.
- Top with remaining cheddar cheese and bacon.
- Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
- Garnish with chopped green onions before serving, if desired.
Notes
- Use freshly cooked bacon for the best flavor and texture.
- Can be assembled a day ahead and refrigerated before baking — just add 10 extra minutes to the bake time.
- Try adding a mix of cheeses like mozzarella or Monterey Jack for variation.
