- 1 lb ground beef
- 4 medium potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp crushed red pepper flakes (optional)
- 2 green onions, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add ground beef, cook until browned. Season with salt, pepper, paprika, and red pepper flakes.
- In a large pot, boil diced potatoes for about 10 minutes, or until just tender. Drain.
- In a large mixing bowl, combine cooked beef mixture, potatoes, sour cream, milk, and half of the shredded cheese. Mix gently.
- Transfer mixture to a greased baking dish. Top with remaining cheese.
- Bake for 20-25 minutes or until cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
Notes
- You can add cooked bacon for extra flavor.
- Try using Monterey Jack or a cheese blend for variation.
- Leftovers can be stored in the fridge for up to 3 days.
