- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 12 Oreo cookies, roughly chopped
- 4 oz cream cheese, softened
- 2 tbsp granulated sugar (for cream cheese mixture)
- 1 egg yolk (for cream cheese mixture)
- 1/2 tsp vanilla extract (for cream cheese mixture)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, combine melted butter and 1 cup sugar. Whisk until smooth.
- Add 2 eggs and 1 tsp vanilla extract. Mix until fully incorporated.
- Stir in cocoa powder, flour, and salt until just combined.
- Fold in half of the chopped Oreos.
- Pour the brownie batter into the prepared pan and spread evenly.
- In a separate bowl, beat the softened cream cheese, 2 tbsp sugar, egg yolk, and 1/2 tsp vanilla extract until smooth.
- Drop spoonfuls of the cream cheese mixture over the brownie batter and swirl gently with a knife.
- Top with remaining chopped Oreos.
- Bake for 30–35 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Cool completely in the pan before slicing and serving.
Notes
- Use full-fat cream cheese for best texture and flavor.
- Don’t overbake to keep brownies fudgy.
- Refrigerate leftovers for up to 5 days.
