Lemon Posset is a creamy, citrusy British dessert made with just three ingredients. It’s luxuriously smooth and incredibly easy to prepare.
Ingredients
- 2 cups heavy cream
- 3/4 cup granulated sugar
- 1/4 cup fresh lemon juice (about 2 lemons)
Instructions
- In a saucepan over medium heat, combine heavy cream and sugar. Stir until sugar is fully dissolved.
- Bring the mixture to a gentle boil, then reduce heat and simmer for 3 minutes while stirring continuously.
- Remove from heat and stir in the lemon juice.
- Let the mixture cool slightly, then pour into small serving glasses or ramekins.
- Refrigerate for at least 4 hours or until set.
- Serve chilled, optionally topped with fresh berries or a dollop of whipped cream.
Notes
- Use freshly squeezed lemon juice for best flavor.
- Ensure the mixture simmers (not just heats) for proper setting.
- Can be made a day in advance and kept chilled.
- Pairs well with shortbread or crisp cookies.
