Description

These lemon cookies are soft, chewy, and bursting with fresh lemon flavor. Perfect for spring or summer treats.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized amounts of dough and roll into balls. Roll each ball in powdered sugar.
  7. Place dough balls onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10–12 minutes, or until the edges are set and the tops are cracked.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra lemon flavor, add a bit of lemon extract.
  • Store in an airtight container for up to 5 days.
  • You can chill the dough for a thicker cookie.
