Description

These Lazy Enchiladas are the easiest way to enjoy the classic Tex-Mex flavor with minimal prep. Made with frozen taquitos, enchilada sauce, and melty cheese, they’re a quick and comforting dinner the whole family will love. No rolling, stuffing, or mess—just layer, bake, and serve!


Ingredients

  • 1 (20 oz) box of frozen beef or chicken taquitos

  • 1 (10 oz) can red enchilada sauce (mild or medium)

  • 1 cup shredded Mexican blend cheese

  • Optional toppings: sour cream, chopped cilantro, diced tomatoes, sliced jalapeños, avocado, or green onions


Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Lightly grease a 9×13-inch baking dish.

  3. Arrange the frozen taquitos in a single layer in the dish.

  4. Pour the enchilada sauce evenly over the taquitos.

  5. Sprinkle the shredded cheese on top.

  6. Bake for 20–25 minutes, or until the taquitos are heated through and the cheese is melted and bubbly.

  7. Remove from oven, add your favorite toppings, and serve hot.


Notes

  • You can use beef, chicken, or cheese taquitos based on your preference.

  • For extra spice, use hot enchilada sauce or add chopped jalapeños before baking.
