Description

A creamy and hearty Keto Tuscan Soup packed with Italian flavors, featuring sausage, kale, and sun-dried tomatoes in a rich, low-carb broth.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups chopped kale
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion and garlic, sauté for 2-3 minutes until fragrant.
  3. Stir in sun-dried tomatoes and red pepper flakes if using, cook for another minute.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Add the chopped kale and cook for 5 minutes until wilted.
  6. Stir in the heavy cream and Parmesan cheese. Simmer for an additional 5 minutes.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • Use spicy sausage for extra kick.
  • Substitute spinach for kale if preferred.
  • Add more broth for a thinner consistency.
