- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1/2 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups chopped kale
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
- Add diced onion and garlic, sauté for 2-3 minutes until fragrant.
- Stir in sun-dried tomatoes and red pepper flakes if using, cook for another minute.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add the chopped kale and cook for 5 minutes until wilted.
- Stir in the heavy cream and Parmesan cheese. Simmer for an additional 5 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
- Use spicy sausage for extra kick.
- Substitute spinach for kale if preferred.
- Add more broth for a thinner consistency.
