Description

A rich and creamy Keto Tuscan Soup loaded with Italian sausage, spinach, and sun-dried tomatoes in a flavorful, low-carb broth.


Ingredients

  • 1 lb Italian sausage
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cups spinach, fresh
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant.
  2. Add Italian sausage and cook until browned, breaking it apart with a spoon.
  3. Stir in sun-dried tomatoes and Italian seasoning, cooking for 2 more minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. Reduce heat and stir in heavy cream. Simmer gently for 5 minutes.
  6. Add spinach and cook until wilted, about 2 minutes.
  7. Season with salt, pepper, and red pepper flakes if using.
  8. Serve hot and enjoy!

Notes

  • Use mild or spicy sausage based on your preference.
  • For thicker soup, reduce the amount of broth slightly.
