- 1 lb Italian sausage
- 4 cups chicken broth
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 small onion, diced
- 1/2 cup sun-dried tomatoes, chopped
- 3 cups spinach, fresh
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant.
- Add Italian sausage and cook until browned, breaking it apart with a spoon.
- Stir in sun-dried tomatoes and Italian seasoning, cooking for 2 more minutes.
- Pour in chicken broth and bring to a simmer.
- Reduce heat and stir in heavy cream. Simmer gently for 5 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Season with salt, pepper, and red pepper flakes if using.
- Serve hot and enjoy!
Notes
- Use mild or spicy sausage based on your preference.
- For thicker soup, reduce the amount of broth slightly.
