Description

A rich and hearty Keto Lasagna Soup packed with all the flavors of traditional lasagna but without the carbs, perfect for a low-carb lifestyle.


Ingredients

  • 1 lb ground beef
  • 1/2 lb Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1/2 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups spinach, chopped (optional)
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef, Italian sausage, and onion. Cook until meat is browned and onion is tender.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in tomato paste, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
  4. Pour in beef broth and bring to a simmer. Cook for 20 minutes to let the flavors combine.
  5. Stir in heavy cream and spinach if using. Simmer for another 5 minutes.
  6. In a small bowl, mix ricotta, mozzarella, and Parmesan cheese together.
  7. Serve soup hot, topped with a generous scoop of the cheese mixture.

Notes

  • You can substitute ground turkey for beef for a leaner option.
  • Add more broth if you prefer a thinner soup.
  • Top with fresh basil or parsley for added flavor.
  • Adjust seasoning to your taste preference.
