- 1 lb ground beef
- 1/2 lb Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (15 oz) diced tomatoes
- 1/4 cup tomato paste
- 1/2 cup heavy cream
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups spinach, chopped (optional)
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef, Italian sausage, and onion. Cook until meat is browned and onion is tender.
- Add minced garlic and cook for another minute until fragrant.
- Stir in tomato paste, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
- Pour in beef broth and bring to a simmer. Cook for 20 minutes to let the flavors combine.
- Stir in heavy cream and spinach if using. Simmer for another 5 minutes.
- In a small bowl, mix ricotta, mozzarella, and Parmesan cheese together.
- Serve soup hot, topped with a generous scoop of the cheese mixture.
Notes
- You can substitute ground turkey for beef for a leaner option.
- Add more broth if you prefer a thinner soup.
- Top with fresh basil or parsley for added flavor.
