  • 1 (20 oz) package refrigerated cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup salami, diced
  • 1/2 cup mozzarella pearls
  • 1/3 cup grated Parmesan cheese
  • 1 cup Italian dressing
  • Salt and pepper, to taste
  • Fresh basil, chopped (optional for garnish)

Instructions

  1. Cook the tortellini according to package directions. Drain and rinse with cold water to stop the cooking process.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, black olives, pepperoncini, salami, mozzarella pearls, and Parmesan cheese.
  3. Pour the Italian dressing over the salad and toss gently to coat all ingredients.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
