- 1 pound Italian sausage (mild or spicy), casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 (15-ounce) can diced tomatoes
- 2 (15-ounce) cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- 2 cups fresh spinach or kale, chopped
- Grated Parmesan cheese, for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove excess fat if needed.
- Add onion, garlic, carrots, and celery. Sauté for 5-6 minutes until the vegetables are softened.
- Stir in diced tomatoes, white beans, chicken broth, oregano, thyme, and red pepper flakes if using. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes to let the flavors meld and vegetables become tender.
- Stir in spinach or kale and cook for an additional 3-5 minutes until greens are wilted.
- Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan if desired.
