- 1 lb Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 (15 oz) can diced tomatoes
- 2 (15 oz) cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add Italian sausage and cook until browned, breaking it apart with a spoon.
- Add diced onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
- Stir in diced tomatoes, white beans, chicken broth, oregano, basil, and red pepper flakes.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve with Parmesan cheese if desired.

- Use spicy Italian sausage for an extra kick.
- Substitute chicken or turkey sausage for a lighter version.
- Stew can be frozen for up to 3 months.
