Description

A hearty and flavorful Italian sausage stew packed with white beans, vegetables, and herbs, perfect for a comforting meal.


Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 (15 oz) can diced tomatoes
  • 2 (15 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add Italian sausage and cook until browned, breaking it apart with a spoon.
  3. Add diced onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
  4. Stir in diced tomatoes, white beans, chicken broth, oregano, basil, and red pepper flakes.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and serve with Parmesan cheese if desired.

Notes

  • Use spicy Italian sausage for an extra kick.
  • Substitute chicken or turkey sausage for a lighter version.
  • Stew can be frozen for up to 3 months.
