- 12 oz wide egg noodles
- 1 lb Italian sausage (mild or hot, casing removed)
- 2 tbsp olive oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1 (14.5 oz) can diced tomatoes with juice
- 1/2 tsp red pepper flakes (optional)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil leaves, chopped (for garnish)
- Freshly grated Parmesan cheese (optional)
Instructions
- Cook egg noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up as it cooks.
- Add sliced bell peppers and red onion to the skillet. Sauté for about 5 minutes until vegetables are tender.
- Stir in the garlic and cook for another 1-2 minutes.
- Deglaze the pan with white wine, scraping up any browned bits from the bottom.
- Add diced tomatoes with juice, red pepper flakes, and Italian seasoning. Simmer for 10 minutes to allow flavors to blend.
- Season with salt and pepper to taste.
- Add cooked noodles to the skillet and toss to combine everything thoroughly.
- Garnish with chopped basil and Parmesan cheese if desired. Serve warm.

- Substitute white wine with chicken broth for an alcohol-free version.
