- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup pepperoncini, sliced
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella cheese, cubed
- 1/2 cup provolone cheese, cubed
- 1/2 cup salami, diced
- 1/4 cup grated Parmesan cheese
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the chopped romaine, cherry tomatoes, cucumber, red onion, pepperoncini, black olives, mozzarella, provolone, and salami.
- In a separate small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss well to combine.
- Top with grated Parmesan cheese and serve immediately.
Notes
- For a vegetarian version, omit the salami and add more cheese or chickpeas.
