Description

A vibrant and refreshing Italian Chopped Salad loaded with crisp vegetables, salami, cheese, and a zesty vinaigrette—perfect as a main or side dish.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella cheese, cubed
  • 1/2 cup provolone cheese, cubed
  • 1/2 cup salami, diced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the chopped romaine, cherry tomatoes, cucumber, red onion, pepperoncini, black olives, mozzarella, provolone, and salami.
  2. In a separate small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss well to combine.
  4. Top with grated Parmesan cheese and serve immediately.

Notes

  • For a vegetarian version, omit the salami and add more cheese or chickpeas.
  • This salad is best served fresh but can be prepped in advance and dressed just before serving.
  • You can substitute the cheeses with any Italian-style cheeses you prefer.
