- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 bay leaf
- 2 cups dried green split peas, rinsed
- 6 cups vegetable broth
- 1 tablespoon lemon juice (optional)
Instructions
- Set the Instant Pot to sauté mode and heat the olive oil.
- Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
- Add the thyme, pepper, salt, and bay leaf. Stir to combine.
- Add the rinsed split peas and vegetable broth. Stir well.
- Close the lid, set the valve to sealing, and cook on high pressure for 15 minutes.
- Allow the pressure to naturally release for 10 minutes, then manually release the remaining pressure.
- Remove the bay leaf. Stir the soup and add lemon juice if using.
- Serve hot with your favorite bread or crackers.
Notes
- For a creamier texture, use an immersion blender to partially puree the soup.
- You can add diced ham or smoked paprika for extra flavor if not vegan.
- This soup thickens as it cools; add water or broth when reheating.
