Ingredients
- Ground beef
- Onion, chopped
- Garlic, minced
- Long grain white rice
- Taco seasoning
- Beef broth (or water with bouillon)
- Tomato sauce
- Diced green chilies (optional)
- Shredded cheddar cheese
- Shredded Monterey Jack cheese
- Fresh cilantro (for garnish)
Instructions
- Set the Instant Pot to sauté mode and cook the ground beef until browned, breaking it apart as it cooks.
- Add chopped onion and minced garlic, and sauté for 2–3 minutes until fragrant and soft.
- Stir in taco seasoning, rice, beef broth, tomato sauce, and diced green chilies (if using). Mix thoroughly.
- Cancel sauté mode. Secure the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
- Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
- Fluff the rice gently and stir in the shredded cheddar and Monterey Jack cheeses until melted and well combined.
- Garnish with chopped cilantro before serving.
