- 12 oz (340 g) pasta (penne or spaghetti)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1 can (14.5 oz) diced tomatoes
- 2 cups fresh spinach, roughly chopped
- 3 cups vegetable broth
- 1 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional, for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add garlic and onion, and sauté until fragrant and softened, about 3-4 minutes.
- Add the diced tomatoes (with juice), spinach, pasta, vegetable broth, basil, oregano, salt, pepper, and red pepper flakes if using.
- Stir to combine and bring the mixture to a boil.
- Reduce heat to medium-low and simmer uncovered, stirring occasionally, for about 10-12 minutes, or until the pasta is cooked and liquid is mostly absorbed.
- Remove from heat and let sit for 2 minutes. Stir in Parmesan cheese if desired.
- Serve warm and enjoy!
Notes
- You can substitute vegetable broth with chicken broth if not vegetarian.
- Add mushrooms or bell peppers for extra veggies.
- Use gluten-free pasta to make it gluten free.
