Description

Huevos Rancheros is a classic Mexican breakfast dish featuring fried eggs served on corn tortillas and topped with a flavorful tomato-chili sauce, often accompanied by beans and garnishes like avocado and cheese.


Ingredients

  • 2 large eggs
  • 2 corn tortillas
  • 1/2 cup refried beans
  • 1/2 cup ranchero sauce (tomato-chili sauce)
  • 1/4 avocado, sliced
  • 2 tablespoons crumbled queso fresco or feta
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste

Instructions

  1. Heat the vegetable oil in a skillet over medium heat and lightly fry the corn tortillas until they are slightly crispy. Set aside.
  2. In the same skillet, warm the refried beans until heated through. Spread evenly on the tortillas.
  3. Fry the eggs to your liking (sunny-side up is traditional), season with salt and pepper.
  4. Place the fried eggs on top of the bean-covered tortillas.
  5. Spoon the warm ranchero sauce over the eggs.
  6. Garnish with avocado slices, crumbled cheese, and chopped cilantro.
  7. Serve immediately.
