Description
A flavorful and traditional Mexican rice made with tomatoes, garlic, onion, and spices, perfect as a side dish for Mexican meals.

- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/4 cup chopped onion
- 1/2 cup tomato sauce or 2 medium tomatoes, blended
- 2 cups chicken broth (or vegetable broth for vegetarian)
- 1/2 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, heat the oil over medium heat. Add the rice and cook, stirring frequently, until the rice is golden brown.
- Add the minced garlic and chopped onion to the rice. Sauté for 2-3 minutes until fragrant and soft.
- Stir in the tomato sauce (or blended tomatoes) and cook for another 2 minutes.
- Add the chicken broth, cumin, and salt. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the pan, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
- Garnish with fresh cilantro if desired and serve warm.
Notes
- Use a heavy-bottomed pan to prevent the rice from burning.
- For extra flavor, add a bay leaf while simmering.
- Adjust the tomato content to your preference for a richer or lighter flavor.
