Ingredients
- 2 ribeye or strip steaks (1 to 1.5 inches thick)
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 cloves garlic, minced
- 1 tsp fresh rosemary or thyme (optional)
- 2 tbsp unsalted butter
Instructions
- Preheat your oven to 400°F (200°C).
- Let the steaks sit at room temperature for 30 minutes before cooking.
- Pat the steaks dry with paper towels to remove moisture.
- Rub both sides of the steaks with olive oil, salt, pepper, and minced garlic.
- Heat a cast iron skillet over high heat until very hot.
- Sear the steaks for 2 minutes per side until a crust forms.
- Add butter and herbs to the skillet, then transfer the skillet to the preheated oven.
- Roast for 5–7 minutes for medium-rare, or longer depending on desired doneness.
- Remove from oven and let the steaks rest for 5–10 minutes before slicing.
Notes
- Use a meat thermometer to ensure desired doneness (130°F for medium-rare).
- Letting the meat rest helps juices redistribute, keeping it moist.
- You can substitute other steak cuts like filet mignon or sirloin.
