Ingredients

  • 1 green bell pepper, finely chopped
  • 1 cucumber, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 cup dill pickles, finely chopped
  • 1/4 cup banana peppers, chopped
  • 1/2 cup shredded carrots
  • 1/4 cup sunflower seeds (optional)
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Chop all the vegetables (bell pepper, cucumber, red onion, pickles, banana peppers, and carrots) into small, bite-sized pieces.
  2. In a large bowl, combine the chopped vegetables and sunflower seeds (if using).
  3. In a small bowl or jar, whisk together the lemon juice, olive oil, apple cider vinegar, garlic powder, salt, and black pepper.
  4. Pour the dressing over the salad and toss until evenly coated.
  5. Let the salad chill in the fridge for at least 15–30 minutes to allow flavors to meld.
  6. Serve cold and enjoy!
