Description

This crisp and refreshing Honeycrisp Apple Broccoli Salad is packed with sweet and savory flavors. It’s made with crunchy broccoli, juicy apples, chewy cranberries, and a creamy dressing. Perfect for potlucks, holidays, or a healthy side dish any time of year.


Ingredients

  • 4 cups broccoli florets, chopped into bite-sized pieces

  • 1 large Honeycrisp apple, cored and diced

  • 1/2 cup dried cranberries

  • 1/2 cup chopped red onion

  • 1/3 cup sunflower seeds (or chopped almonds)

  • 1/2 cup shredded cheddar cheese (optional)

For the dressing:

  • 1/2 cup plain Greek yogurt (or mayonnaise for a creamier version)

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • Salt and pepper, to taste


Instructions

  1. In a large bowl, combine the chopped broccoli, diced apple, cranberries, red onion, sunflower seeds, and cheddar cheese (if using).

  2. In a small bowl, whisk together the Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.

  3. Pour the dressing over the salad and toss everything together until evenly coated.

  4. Chill in the fridge for at least 30 minutes before serving to let the flavors come together.

  5. Give it a final toss and serve cold.


Notes

  • Use mayonnaise instead of Greek yogurt for a richer dressing.

  • Add cooked bacon for extra flavor and crunch.

  • Best enjoyed within 2–3 days.

  • Honeycrisp apples add sweetness and crunch, but Fuji or Gala work well too.
