Description

A naturally sweetened peach jam made with fresh peaches and honey, perfect for spreading on toast or adding to desserts.


Ingredients

  • 4 cups peeled and chopped fresh peaches (about 8 medium peaches)
  • 1/4 cup lemon juice (freshly squeezed)
  • 1/2 cup water
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 package (1.75 oz) low- or no-sugar needed pectin
  • 1 cup honey

Instructions

  1. Peel and chop the peaches, then measure 4 cups.
  2. Place peaches, lemon juice, water, and cinnamon (if using) in a large saucepan.
  3. Stir in the pectin and bring the mixture to a boil over medium-high heat, stirring constantly.
  4. Once boiling, add the honey and return to a full boil, then boil hard for 1-2 minutes while stirring constantly.
  5. Remove from heat and skim off any foam.
  6. Ladle hot jam into sterilized jars, leaving 1/4 inch headspace.
  7. Wipe rims, apply lids, and process in a boiling water bath for 10 minutes.
  8. Remove jars and let cool for 24 hours. Check seals before storing.

Notes

  • This recipe works best with ripe, flavorful peaches.
  • You can adjust the amount of honey to taste, but less may affect the set.
  • Store opened jam in the refrigerator for up to 3 weeks.
