Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, whisk together Dijon mustard, honey, olive oil, lemon juice, garlic powder, salt, and pepper.
- Place the chicken breasts in a baking dish and pour the honey mustard mixture over them, coating each piece well.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil, sprinkle the mozzarella and cheddar cheese evenly over the chicken.
- Return to the oven and bake uncovered for another 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish with chopped parsley before serving, if desired.
