- 6 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1/4 cup Dijon mustard
- 2 tablespoons whole grain mustard
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or oven-safe skillet.
- Season chicken thighs with salt and pepper.
- In a small bowl, whisk together Dijon mustard, whole grain mustard, honey, apple cider vinegar, garlic, paprika, and thyme.
- Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 3–4 minutes until golden brown. Flip and cook 2 more minutes. Remove from heat.
- Pour honey mustard sauce over the chicken, coating each piece evenly.
- Transfer skillet to the oven and bake for 25–30 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
- Spoon pan sauce over chicken before serving and garnish with fresh parsley.
Notes
- For a deeper flavor, marinate the chicken in the sauce for 1–2 hours before cooking.
- Serve with roasted vegetables, rice, or mashed potatoes.
- Boneless thighs can be used; reduce baking time by about 5–7 minutes.
