Description

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/4 cup Dijon mustard
  • 2 tablespoons whole grain mustard
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish or oven-safe skillet.
  2. Season chicken thighs with salt and pepper.
  3. In a small bowl, whisk together Dijon mustard, whole grain mustard, honey, apple cider vinegar, garlic, paprika, and thyme.
  4. Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 3–4 minutes until golden brown. Flip and cook 2 more minutes. Remove from heat.
  5. Pour honey mustard sauce over the chicken, coating each piece evenly.
  6. Transfer skillet to the oven and bake for 25–30 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
  7. Spoon pan sauce over chicken before serving and garnish with fresh parsley.

Notes

  • For a deeper flavor, marinate the chicken in the sauce for 1–2 hours before cooking.
  • Serve with roasted vegetables, rice, or mashed potatoes.
  • Boneless thighs can be used; reduce baking time by about 5–7 minutes.
