Description

A flavorful and healthy honey mustard chicken salad featuring juicy grilled chicken, crisp vegetables, and a tangy honey mustard dressing.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil (for dressing)
  • Salt and pepper to taste (for dressing)

Instructions

  1. Preheat grill or skillet over medium heat.
  2. Rub chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 5-7 minutes per side or until cooked through. Let rest and slice.
  4. In a bowl, whisk together honey, Dijon mustard, yellow mustard, apple cider vinegar, olive oil, salt, and pepper to make the dressing.
  5. In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and carrots.
  6. Add sliced chicken on top of the salad.
  7. Drizzle with honey mustard dressing and toss gently to coat.
  8. Serve immediately.

Notes

  • You can substitute grilled chicken with rotisserie chicken for convenience.
  • Adjust dressing sweetness or tanginess by varying honey or vinegar amounts.
