- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon yellow mustard
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil (for dressing)
- Salt and pepper to taste (for dressing)
Instructions
- Preheat grill or skillet over medium heat.
- Rub chicken breasts with olive oil, salt, and pepper.
- Grill chicken for 5-7 minutes per side or until cooked through. Let rest and slice.
- In a bowl, whisk together honey, Dijon mustard, yellow mustard, apple cider vinegar, olive oil, salt, and pepper to make the dressing.
- In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and carrots.
- Add sliced chicken on top of the salad.
- Drizzle with honey mustard dressing and toss gently to coat.
- Serve immediately.

- You can substitute grilled chicken with rotisserie chicken for convenience.
