Homemade Taquitos are crispy, rolled tortillas filled with seasoned meat and cheese, then baked or fried to golden perfection—perfect for snacking, appetizers, or a fun main dish.

- 2 cups cooked, shredded chicken or beef
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 12 small corn tortillas
- Cooking spray or vegetable oil (for baking or frying)
Instructions
- Preheat oven to 425°F (220°C) or heat oil in a deep skillet to 350°F (175°C) for frying.
- In a bowl, mix shredded meat, cheese, cumin, chili powder, garlic powder, onion powder, and salt.
- Wrap tortillas in a damp paper towel and microwave for 30 seconds to soften.
- Place 2–3 tablespoons of filling on one edge of each tortilla and roll tightly.
- For baking: Place taquitos seam-side down on a greased baking sheet. Lightly spray with cooking spray and bake for 15–20 minutes or until golden and crispy.
- For frying: Carefully place taquitos seam-side down in hot oil and fry for 2–3 minutes per side or until golden. Drain on paper towels.
- Serve warm with salsa, guacamole, or sour cream.
Notes
- Use toothpicks to hold taquitos closed if needed while frying.
- Make a large batch and freeze before baking or frying for later.
- Try adding refried beans or sautéed veggies to the filling for variety.
