Description

Ingredients

  • 2 1/4 tsp active dry yeast
  • 1/4 cup warm water (110°F)
  • 1/2 cup whole milk, warmed
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, cold
  • 1 egg (for egg wash)
  • 4 oz semisweet or dark chocolate, chopped

Instructions

  1. In a small bowl, dissolve yeast in warm water and let it sit for 5-10 minutes until foamy.
  2. In a large bowl, mix the milk, sugar, salt, and yeast mixture.
  3. Gradually add the flour and mix until a dough forms. Knead lightly, shape into a rectangle, cover, and chill for 30 minutes.
  4. Roll out the dough into a large rectangle. Slice cold butter and arrange on two-thirds of the dough, then fold like a letter. Chill for 30 minutes.
  5. Repeat rolling and folding the dough three more times, chilling between each fold for 30 minutes.
  6. Roll the dough into a large rectangle, then cut into triangles.
  7. Place a few chocolate pieces at the wide end of each triangle and roll toward the point to form croissants.
  8. Place croissants on a baking sheet, cover, and let them rise for 1 to 2 hours until puffy.
  9. Preheat oven to 400°F (200°C). Beat egg and brush over the croissants.
  10. Bake for 15-20 minutes until golden brown. Cool slightly before serving.
