Description

This classic homemade apple pie features a flaky, buttery crust filled with tender, cinnamon-spiced apples, making it the perfect comforting dessert for any occasion.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup (2 sticks) unsalted butter, cold and cut into cubes
  • 68 tablespoons ice water
  • 6 cups peeled, cored, and sliced apples (Granny Smith or Honeycrisp preferred)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. In a large bowl, mix flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide into two discs, wrap in plastic, and chill for at least 1 hour.
  3. Preheat oven to 425°F (220°C).
  4. In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
  5. On a floured surface, roll out one disc of dough into a circle and place it in a 9-inch pie dish.
  6. Fill with the apple mixture and dot with a few small pieces of butter (optional).
  7. Roll out the second dough disc and place it over the apples. Trim and crimp the edges to seal. Cut slits in the top for steam to escape.
  8. Whisk together egg and milk, then brush the top crust with the egg wash.
  9. Bake for 45–50 minutes, or until the crust is golden brown and the filling is bubbling. Cover the edges with foil if they brown too quickly.
  10. Let the pie cool for at least 2 hours before serving.

Notes

  • Use a mix of tart and sweet apples for more depth of flavor.
  • To avoid a soggy bottom crust, you can pre-bake the bottom crust for 5–7 minutes before adding the filling.
  • Serve with vanilla ice cream or whipped cream for a classic touch.
