This classic homemade apple pie features a flaky, buttery crust filled with tender, cinnamon-spiced apples, making it the perfect comforting dessert for any occasion.

- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup (2 sticks) unsalted butter, cold and cut into cubes
- 6–8 tablespoons ice water
- 6 cups peeled, cored, and sliced apples (Granny Smith or Honeycrisp preferred)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- In a large bowl, mix flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide into two discs, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 425°F (220°C).
- In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
- On a floured surface, roll out one disc of dough into a circle and place it in a 9-inch pie dish.
- Fill with the apple mixture and dot with a few small pieces of butter (optional).
- Roll out the second dough disc and place it over the apples. Trim and crimp the edges to seal. Cut slits in the top for steam to escape.
- Whisk together egg and milk, then brush the top crust with the egg wash.
- Bake for 45–50 minutes, or until the crust is golden brown and the filling is bubbling. Cover the edges with foil if they brown too quickly.
- Let the pie cool for at least 2 hours before serving.
Notes
- Use a mix of tart and sweet apples for more depth of flavor.
- To avoid a soggy bottom crust, you can pre-bake the bottom crust for 5–7 minutes before adding the filling.
- Serve with vanilla ice cream or whipped cream for a classic touch.
