Description

Easy homemade Almond Joys with sweet coconut centers, toasted almonds, and a smooth chocolate coating. A fun, delicious copycat treat for dessert trays or gifting!


Ingredients

  • 2 cups sweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 cup powdered sugar
  • 20 whole almonds, toasted
  • 12 oz semi-sweet or milk chocolate chips (or melting wafers)
  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and powdered sugar. Mix until well combined and sticky.
  3. Scoop small amounts of the coconut mixture and shape into rectangular or oval mounds.
  4. Press one or two whole almonds on top of each mound.
  5. Place the coconut mounds on the baking sheet and freeze for about 20-30 minutes, or until firm.
  6. Melt the chocolate chips (and coconut oil if using) in a microwave-safe bowl or double boiler until smooth.
  7. Dip each coconut-almond mound into the melted chocolate, coating completely. Use a fork to lift out and tap off excess chocolate.
  8. Place back on the parchment-lined sheet and let the chocolate set at room temperature or in the fridge.

Notes

  • Use dark chocolate for a richer twist on the classic.
  • Skip the almonds for a nut-free version.
  • Drizzle with white chocolate for a pretty finish.
  • Add a touch of almond extract to the coconut mixture for extra flavor.
