Description
Easy homemade Almond Joys with sweet coconut centers, toasted almonds, and a smooth chocolate coating. A fun, delicious copycat treat for dessert trays or gifting!
Ingredients
Scale
- 2 cups sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- 1/2 cup powdered sugar
- 20 whole almonds, toasted
- 12 oz semi-sweet or milk chocolate chips (or melting wafers)
- 1 tbsp coconut oil or shortening (optional, for smoother chocolate)
Instructions
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and powdered sugar. Mix until well combined and sticky.
- Scoop small amounts of the coconut mixture and shape into rectangular or oval mounds.
- Press one or two whole almonds on top of each mound.
- Place the coconut mounds on the baking sheet and freeze for about 20-30 minutes, or until firm.
- Melt the chocolate chips (and coconut oil if using) in a microwave-safe bowl or double boiler until smooth.
- Dip each coconut-almond mound into the melted chocolate, coating completely. Use a fork to lift out and tap off excess chocolate.
- Place back on the parchment-lined sheet and let the chocolate set at room temperature or in the fridge.
Notes
- Use dark chocolate for a richer twist on the classic.
- Skip the almonds for a nut-free version.
- Drizzle with white chocolate for a pretty finish.
- Add a touch of almond extract to the coconut mixture for extra flavor.
