  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Cornbread Topping:

  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 egg
  • 1/3 cup milk
  • nonstick cooking spray

Instructions

  1. Preheat the oven and prepare the dish: Preheat the oven to 375°F and lightly spray a 9×9-inch baking dish with nonstick spray.
  2. Cook the beef filling: In a skillet, cook ground beef and onion until browned. Add corn, tomatoes, seasonings, and cheese. Simmer briefly and then pour into the baking dish.
  3. Prepare the cornbread topping: In a bowl, mix corn muffin mix with egg and milk. Spread the batter over the beef mixture in the dish.
