- 1 cup shredded cheddar cheese

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Cornbread Topping:
- 1 box (8.5 oz) Jiffy corn muffin mix
- 1 egg
- 1/3 cup milk

Instructions
- Preheat the oven and prepare the dish: Preheat the oven to 375°F and lightly spray a 9×9-inch baking dish with nonstick spray.
- Cook the beef filling: In a skillet, cook ground beef and onion until browned. Add corn, tomatoes, seasonings, and cheese. Simmer briefly and then pour into the baking dish.
- Prepare the cornbread topping: In a bowl, mix corn muffin mix with egg and milk. Spread the batter over the beef mixture in the dish.
- Bake the Hillbilly Pie: Bake for 25–30 minutes until the cornbread is golden. Let it rest before serving.
