- 2 large chicken breasts, cut into cubes
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 3 tablespoons honey
- 2 tablespoons soy sauce
- Salt and pepper, to taste
- 1 cup elbow macaroni
- 1 tablespoon butter (for mac & cheese)
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste (for mac & cheese)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Boil a pot of water and cook elbow macaroni according to package instructions. Drain and set aside.
- In a skillet over medium heat, add olive oil and cook the cubed chicken until browned and cooked through. Season with salt and pepper.
- Add butter to the skillet with the chicken, then stir in minced garlic. Cook for 1 minute until fragrant.
- Stir in honey and soy sauce. Simmer for 2–3 minutes until sauce thickens slightly. Remove from heat and keep warm.
- In a separate saucepan, melt 1 tablespoon butter. Stir in flour and cook for 1 minute.
- Gradually add milk while whisking continuously to form a smooth sauce. Cook for 2–3 minutes until thickened.
- Stir in shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.
- Add cooked macaroni to the cheese sauce and mix well.
- Serve honey garlic butter chicken on top of the mac & cheese. Garnish with chopped parsley if desired.
Notes
- Use boneless, skinless chicken thighs for extra juiciness.
- Add red pepper flakes for a spicy kick.
- Try whole wheat pasta for added fiber.
