- 1 large cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 teaspoon Dijon mustard
- 1 1/2 cups grated cheddar cheese
- Salt and pepper to taste
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 cup grated Parmesan cheese (optional for topping)
Instructions
- Preheat the oven to 400°F (200°C).
- Boil or steam the cauliflower florets for 5–7 minutes until just tender. Drain and set aside.
- In a saucepan, melt the butter over medium heat, then stir in the flour to form a roux. Cook for 1–2 minutes.
- Gradually whisk in the milk until the sauce thickens and is smooth.
- Stir in the Dijon mustard, nutmeg (if using), and grated cheddar cheese. Season with salt and pepper.
- Place the cauliflower in a baking dish and pour the cheese sauce over it.
- Sprinkle with Parmesan cheese if desired.
- Bake for 20–25 minutes until golden and bubbling.
- Serve hot as a side dish or a vegetarian main course.
