Description

This heavenly creamy cinnamon rice pudding is a comforting, sweet dessert made with tender rice, milk, sugar, and warm cinnamon spice, perfect for cozy nights or family gatherings.

Ingredients

Units Scale
  • 1 cup long-grain white rice
  • 4 cups whole milk
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 cinnamon stick
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream (optional, for extra creaminess)

Instructions

  1. In a large saucepan, combine the rice, water, and cinnamon stick. Bring to a boil over medium heat.
  2. Reduce heat to low, cover, and simmer for 10 minutes or until the water is mostly absorbed.
  3. Add the milk, sugar, and salt. Stir well and bring to a gentle simmer over medium-low heat.
  4. Cook uncovered for 25–30 minutes, stirring frequently, until the mixture thickens and the rice is very tender.
  5. Remove from heat and stir in the ground cinnamon, vanilla extract, and heavy cream if using.
  6. Let the pudding cool slightly, then remove the cinnamon stick.
  7. Serve warm or chilled, garnished with a sprinkle of ground cinnamon if desired.

Notes

  • Stir frequently during cooking to prevent sticking or burning.
  • Adjust sugar to taste for a sweeter or milder dessert.
  • Use Arborio rice for a thicker, more risotto-like texture.
  • Leftovers can be stored in the refrigerator for up to 3 days.
