Description

A warm and satisfying breakfast casserole loaded with hash browns, cheese, eggs, and ham—perfect for feeding a crowd or meal prepping ahead.


Ingredients

  • 6 cups frozen shredded hash browns, thawed
  • 2 cups cooked ham, diced
  • 1/2 cup green onions, sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 8 large eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Spread the hash browns evenly in the bottom of the prepared dish.
  3. Sprinkle the ham, green onions, cheddar cheese, and Monterey Jack cheese over the hash browns.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the layered ingredients in the baking dish.
  6. Bake uncovered for 50 to 60 minutes, or until a knife inserted in the center comes out clean.
  7. Let stand 10 minutes before serving.

Notes

  • Can be assembled the night before and refrigerated until baking.
  • Swap ham with cooked bacon or sausage for variation.
  • Add diced bell peppers for extra flavor and color.
