- 6 cups frozen shredded hash browns, thawed
- 2 cups cooked ham, diced
- 1/2 cup green onions, sliced
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Monterey Jack cheese
- 8 large eggs
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Spread the hash browns evenly in the bottom of the prepared dish.
- Sprinkle the ham, green onions, cheddar cheese, and Monterey Jack cheese over the hash browns.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the layered ingredients in the baking dish.
- Bake uncovered for 50 to 60 minutes, or until a knife inserted in the center comes out clean.
- Let stand 10 minutes before serving.
Notes
- Can be assembled the night before and refrigerated until baking.
- Swap ham with cooked bacon or sausage for variation.
