Description

A comforting, cheesy, and meaty baked dish, Hearty Beef Lombardi Casserole is a crowd-pleaser perfect for family dinners or potlucks. It combines seasoned ground beef, pasta, tomatoes, and a creamy cheese layer, all baked to perfection.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 8 oz egg noodles
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. Add garlic and ground beef. Cook until beef is browned. Drain excess fat.
  4. Stir in diced tomatoes, tomato paste, salt, pepper, and oregano. Simmer for 10 minutes.
  5. Meanwhile, cook egg noodles according to package instructions. Drain and set aside.
  6. In a mixing bowl, combine sour cream and cream cheese until smooth.
  7. In a greased 9×13 inch baking dish, layer half the noodles, spread half the sour cream mixture, then half the meat sauce. Repeat layers.
  8. Top with shredded cheddar and mozzarella cheese.
  9. Bake uncovered for 25-30 minutes or until bubbly and cheese is melted and golden.
  10. Let cool for 5 minutes before serving. Garnish with parsley if desired.

  • You can prepare this dish ahead of time and refrigerate before baking.
  • Substitute ground turkey for a lighter version.
