- 1 cup freeze-dried strawberries
- 1 cup rolled oats
- 1/2 cup vanilla protein powder
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened shredded coconut
- 1/2 teaspoon vanilla extract
- 2–4 tablespoons water, as needed
Instructions
- In a food processor, blend the freeze-dried strawberries into a fine powder.
- Add the rolled oats, protein powder, almond butter, honey, shredded coconut, and vanilla extract. Pulse until well combined.
- Add water 1 tablespoon at a time until the mixture holds together.
- Roll the mixture into 1-inch balls and refrigerate for 30 minutes.
- Store in an airtight container in the refrigerator.
Notes
- For extra texture, fold in some chopped freeze-dried strawberries after blending.
- You can substitute almond butter with peanut butter or cashew butter.
