Description

A nourishing and healthy chicken detox soup packed with vegetables, lean protein, and anti-inflammatory ingredients to help boost your immune system and support overall wellness.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 cup broccoli florets
  • 1 cup chopped kale or spinach
  • 1 pound boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon dried thyme
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté for 2-3 minutes until fragrant.
  2. Add carrots, celery, zucchini, yellow squash, and broccoli. Cook for 5-7 minutes, stirring occasionally.
  3. Add chicken breasts, chicken broth, turmeric, ginger, and thyme. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  4. Remove chicken, shred with two forks, and return to the pot.
  5. Stir in kale or spinach and cook for another 3-5 minutes until greens are wilted.
  6. Add lemon juice, salt, and pepper to taste. Stir in parsley if using.
  7. Serve warm for a soothing and nutritious meal.

Notes

  • Use rotisserie chicken to save time on cooking.
  • Add quinoa or brown rice for extra fiber and heartiness.
  • Freeze leftovers in portioned containers for easy healthy meals later.
