- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 cup broccoli florets
- 1 cup chopped kale or spinach
- 1 pound boneless, skinless chicken breasts
- 6 cups low-sodium chicken broth
- 1 teaspoon turmeric
- 1/2 teaspoon ground ginger
- 1/2 teaspoon dried thyme
- Juice of 1 lemon
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté for 2-3 minutes until fragrant.
- Add carrots, celery, zucchini, yellow squash, and broccoli. Cook for 5-7 minutes, stirring occasionally.
- Add chicken breasts, chicken broth, turmeric, ginger, and thyme. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
- Remove chicken, shred with two forks, and return to the pot.
- Stir in kale or spinach and cook for another 3-5 minutes until greens are wilted.
- Add lemon juice, salt, and pepper to taste. Stir in parsley if using.
- Serve warm for a soothing and nutritious meal.

- Use rotisserie chicken to save time on cooking.
- Add quinoa or brown rice for extra fiber and heartiness.
