- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 teaspoon turmeric powder
- 1 teaspoon ground ginger
- 6 cups chicken broth
- 2 cups cooked, shredded chicken breast
- 2 cups spinach leaves
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant and translucent.
- Add carrots and celery, cook for 3-4 minutes.
- Stir in zucchini, yellow squash, broccoli, and cauliflower. Cook for another 5 minutes.
- Season with turmeric, ginger, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Add cooked shredded chicken and spinach. Stir until spinach wilts.
- Stir in lemon juice and adjust seasoning if needed.
- Garnish with fresh parsley before serving.
Notes
- Use organic chicken and vegetables for a cleaner soup.
- You can add other vegetables like kale or sweet potatoes.
- Store leftovers in an airtight container in the fridge for up to 4 days.
