Description

A light and flavorful grilled salmon dish topped with a refreshing mango salsa, perfect for a healthy and satisfying meal.

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat grill to medium-high heat and lightly oil the grates.
  2. Brush salmon fillets with olive oil and season with salt and pepper.
  3. Grill salmon for 4-5 minutes per side, or until cooked through and flaky.
  4. In a bowl, combine mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice to make the salsa.
  5. Serve the grilled salmon topped with the fresh mango salsa.

Notes

  • Use ripe but firm mangoes for the best texture in the salsa.
  • You can substitute salmon with another firm fish like mahi-mahi or halibut.
  • Add avocado to the salsa for extra creaminess.
