Ingredients
- 4 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat grill to medium-high heat and lightly oil the grates.
- Brush salmon fillets with olive oil and season with salt and pepper.
- Grill salmon for 4-5 minutes per side, or until cooked through and flaky.
- In a bowl, combine mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice to make the salsa.
- Serve the grilled salmon topped with the fresh mango salsa.
Notes
- Use ripe but firm mangoes for the best texture in the salsa.
- You can substitute salmon with another firm fish like mahi-mahi or halibut.
