Description

A quick and healthy Greek-inspired rice bowl featuring seasoned ground turkey, fresh vegetables, and a tangy tzatziki sauce, perfect for meal prep or a light dinner.


Ingredients

  • 1 lb ground turkey
  • 1 cup uncooked brown rice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp chopped fresh dill


Instructions

  1. Cook the brown rice according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey, garlic powder, onion powder, oregano, salt, and pepper. Cook until turkey is browned and cooked through, about 7-10 minutes.
  3. In a small bowl, mix Greek yogurt, lemon juice, minced garlic, and dill to make the tzatziki sauce. Set aside.
  4. Prepare the vegetables: halve the cherry tomatoes, dice the cucumber, chop the red onion, and slice the olives.
  5. Assemble the bowls: add a portion of rice, then top with ground turkey, vegetables, feta cheese, and a dollop of tzatziki sauce.
  6. Serve immediately or store in meal prep containers for up to 4 days.
