Description

Healthy Greek Chicken Bowls are a flavorful and nutritious meal, combining tender chicken, fresh vegetables, and creamy tzatziki sauce, all served in a bowl for a satisfying and balanced dish.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce


Instructions

  1. Preheat the grill or stovetop grill pan over medium heat.
  2. Season the chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
  3. Grill the chicken for 6-7 minutes per side or until fully cooked, reaching an internal temperature of 165°F (74°C).
  4. Let the chicken rest for 5 minutes before slicing it into strips.
  5. In a bowl, layer the quinoa, diced cucumber, tomato, red onion, Kalamata olives, and crumbled feta cheese.
  6. Top with sliced chicken and drizzle with tzatziki sauce.
