Description

A fresh, low-carb alternative to traditional wraps, these lettuce wraps combine tender chicken with crisp veggies and a creamy, wholesome dressing.


Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/3 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 celery stalks, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup grapes or apples, diced (optional)
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 810 fresh romaine or butter lettuce leaves

Instructions

  1. In a large mixing bowl, combine the shredded chicken, Greek yogurt, mayonnaise, celery, red onion, and fruit if using.
  2. Add Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir until everything is evenly coated.
  3. Taste and adjust seasoning if needed.
  4. Separate and rinse the lettuce leaves, then pat dry.
  5. Spoon the chicken salad into the center of each lettuce leaf.
  6. Fold or roll the lettuce around the filling and serve immediately.
