A fresh, low-carb alternative to traditional wraps, these lettuce wraps combine tender chicken with crisp veggies and a creamy, wholesome dressing.

- 2 cups cooked chicken breast, shredded or chopped
- 1/3 cup Greek yogurt
- 1/4 cup mayonnaise
- 2 celery stalks, finely chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup grapes or apples, diced (optional)
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8–10 fresh romaine or butter lettuce leaves
Instructions
- In a large mixing bowl, combine the shredded chicken, Greek yogurt, mayonnaise, celery, red onion, and fruit if using.
- Add Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir until everything is evenly coated.
- Taste and adjust seasoning if needed.
- Separate and rinse the lettuce leaves, then pat dry.
- Spoon the chicken salad into the center of each lettuce leaf.
- Fold or roll the lettuce around the filling and serve immediately.

- Use canned or rotisserie chicken for convenience.
- Add chopped nuts like almonds or walnuts for extra crunch.
- Incorporate avocado or cucumber for a creamier or fresher twist.
