Description

These Healthy Apple Cinnamon Breakfast Cookies are soft, chewy, and packed with wholesome ingredients. Perfect for a grab-and-go breakfast or a healthy snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp chia seeds (optional)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil, melted
  • 1 medium apple, peeled and finely chopped
  • 1/4 cup raisins or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together oats, whole wheat flour, cinnamon, nutmeg, baking powder, salt, and chia seeds.
  3. In another bowl, whisk together applesauce, honey (or maple syrup), egg, vanilla extract, and melted coconut oil.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Fold in the chopped apple and raisins or nuts if using.
  6. Drop spoonfuls of the batter onto the prepared baking sheet and flatten slightly with the back of a spoon.
  7. Bake for 12–15 minutes or until cookies are golden and set.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • You can freeze the cookies for up to 3 months.
  • Swap out raisins for chocolate chips for a sweeter treat.
  • Use a flax egg to make these cookies vegan.
