Chicken:
- 4 boneless, skinless chicken breasts
Sauce:
- 1 cup pineapple juice
- 1/2 cup low-sodium soy sauce
- 1/3 cup brown sugar
- 1 tablespoon minced garlic
- 1 teaspoon grated fresh ginger (or 1/2 teaspoon ground ginger)
Vegetables:
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1/2 cup chopped pineapple (fresh or canned)
Thickening (optional):
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Garnish:
- Chopped green onions and sesame seeds
Instructions
- Place the chicken in the slow cooker: Arrange chicken breasts at the bottom of the slow cooker.
- Prepare the sauce: In a bowl, combine pineapple juice, soy sauce, brown sugar, garlic, and ginger. Pour over the chicken.
- Add vegetables: Place bell peppers and pineapple on top of the chicken.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
