A hearty and comforting one-pot meal, this Hamburger Soup with Macaroni, also known as Goulash Soup, is loaded with ground beef, tender macaroni, and flavorful vegetables in a rich tomato-based broth.

- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 cup elbow macaroni
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 bay leaf
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Add chopped onion and garlic, sauté for 2-3 minutes until fragrant.
- Stir in bell pepper, carrots, and celery. Cook for another 5 minutes until vegetables begin to soften.
- Add diced tomatoes, tomato sauce, beef broth, basil, oregano, bay leaf, salt, and pepper. Stir well.
- Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes.
- Add the macaroni and cook for another 10-12 minutes until pasta is tender.
- Remove bay leaf, adjust seasoning if needed, and serve hot.
Notes
- For a spicier version, add a pinch of red pepper flakes.
- Leftovers can be stored in the fridge for up to 4 days.
- For gluten-free, use gluten-free pasta.
