Description

A hearty and comforting one-pot meal, this Hamburger Soup with Macaroni, also known as Goulash Soup, is loaded with ground beef, tender macaroni, and flavorful vegetables in a rich tomato-based broth.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup elbow macaroni
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
  2. Add chopped onion and garlic, sauté for 2-3 minutes until fragrant.
  3. Stir in bell pepper, carrots, and celery. Cook for another 5 minutes until vegetables begin to soften.
  4. Add diced tomatoes, tomato sauce, beef broth, basil, oregano, bay leaf, salt, and pepper. Stir well.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes.
  6. Add the macaroni and cook for another 10-12 minutes until pasta is tender.
  7. Remove bay leaf, adjust seasoning if needed, and serve hot.

Notes

  • For a spicier version, add a pinch of red pepper flakes.
  • Leftovers can be stored in the fridge for up to 4 days.
  • For gluten-free, use gluten-free pasta.
