Description

A hearty and comforting soup made with ham, beans, and vegetables, perfect for a cozy meal.


Ingredients

  • 2 cups cooked ham, diced
  • 1 pound dried great northern beans, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse and soak the beans overnight or use the quick soak method.
  2. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic until softened.
  3. Add diced ham, soaked beans, chicken broth, bay leaves, thyme, pepper, and salt.
  4. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
  5. Remove bay leaves. Adjust seasoning if needed and serve hot.

Notes

  • For extra flavor, add a ham bone while simmering and remove before serving.
  • You can use canned beans for a quicker version; reduce cooking time accordingly.
  • Leftovers freeze well for future meals.
