- 1 lb ground turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 8 small corn tortillas, cut into quarters
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, diced tomatoes, chopped cilantro, sliced jalapeños
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon.
- Add taco seasoning and water to the turkey, stir well, and simmer for 2-3 minutes.
- Stir in black beans, corn, and salsa. Cook for another 2-3 minutes until heated through.
- Lightly grease a 9×13-inch baking dish. Spread half of the tortilla pieces on the bottom.
- Top with half of the turkey mixture and sprinkle with 1 cup of cheese.
- Repeat layers with remaining tortillas, turkey mixture, and cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let cool for 5 minutes before serving. Top with optional toppings if desired.
Notes
- Use ground beef or chicken as a substitute for turkey if preferred.
- For extra spice, add diced jalapeños into the meat mixture.
- This casserole can be made ahead and refrigerated before baking.
- Store leftovers in an airtight container for up to 3 days.
