Description

A flavorful and easy-to-make Ground Turkey Taco Casserole packed with seasoned meat, beans, corn, and cheese, perfect for a family-friendly dinner.


Ingredients

  • 1 lb ground turkey
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 8 small corn tortillas, cut into quarters
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, diced tomatoes, chopped cilantro, sliced jalapeños

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon.
  3. Add taco seasoning and water to the turkey, stir well, and simmer for 2-3 minutes.
  4. Stir in black beans, corn, and salsa. Cook for another 2-3 minutes until heated through.
  5. Lightly grease a 9×13-inch baking dish. Spread half of the tortilla pieces on the bottom.
  6. Top with half of the turkey mixture and sprinkle with 1 cup of cheese.
  7. Repeat layers with remaining tortillas, turkey mixture, and cheese.
  8. Cover with foil and bake for 20 minutes.
  9. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  10. Let cool for 5 minutes before serving. Top with optional toppings if desired.

Notes

  • Use ground beef or chicken as a substitute for turkey if preferred.
  • For extra spice, add diced jalapeños into the meat mixture.
  • This casserole can be made ahead and refrigerated before baking.
  • Store leftovers in an airtight container for up to 3 days.
