- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cinnamon (optional for a warm flavor)
- 1 tablespoon olive oil
- 1/2 cup shredded mozzarella or cheddar cheese (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic and sauté for 2–3 minutes until soft.
- Add ground turkey and cook until browned, breaking it up with a spoon.
- Stir in salt, pepper, paprika, thyme, and cinnamon (if using).
- Add diced sweet potatoes and stir to combine. Cook for another 5 minutes, stirring occasionally.
- Transfer mixture to the prepared baking dish and cover with foil.
- Bake for 25–30 minutes, or until sweet potatoes are tender.
- Remove foil, sprinkle cheese on top if using, and return to oven for 5–7 minutes until melted.
- Garnish with chopped parsley and serve warm.
Notes
- Substitute ground turkey with chicken or beef if preferred.
- Add spinach or kale for extra greens.
- Makes a great make-ahead meal—just reheat before serving.
