These Ground Turkey Black Bean Enchiladas are a healthy, protein-packed dinner option made with lean turkey, black beans, and topped with a flavorful enchilada sauce and cheese. Ready in just 40 minutes!
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (4 oz) can diced green chilies
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 (15 oz) can enchilada sauce
- 8 medium flour or corn tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
- Add garlic and ground turkey. Cook until turkey is browned and fully cooked, breaking it up with a spoon, about 6-7 minutes.
- Stir in black beans, green chilies, cumin, chili powder, paprika, salt, and pepper. Cook for another 2-3 minutes. Remove from heat.
- Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
- Place a portion of the turkey and bean mixture into each tortilla, roll them up, and place seam side down in the baking dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake for 20 minutes, or until cheese is melted and bubbly.
- Garnish with fresh cilantro if desired. Serve warm.
Notes
- You can substitute ground chicken or beef if preferred.
- Use whole wheat tortillas for a healthier option.
- Top with avocado, sour cream, or salsa for added flavor.
