Description

These Ground Turkey Black Bean Enchiladas are a healthy, protein-packed dinner option made with lean turkey, black beans, and topped with a flavorful enchilada sauce and cheese. Ready in just 40 minutes!


Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (4 oz) can diced green chilies
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 (15 oz) can enchilada sauce
  • 8 medium flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  3. Add garlic and ground turkey. Cook until turkey is browned and fully cooked, breaking it up with a spoon, about 6-7 minutes.
  4. Stir in black beans, green chilies, cumin, chili powder, paprika, salt, and pepper. Cook for another 2-3 minutes. Remove from heat.
  5. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  6. Place a portion of the turkey and bean mixture into each tortilla, roll them up, and place seam side down in the baking dish.
  7. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  8. Bake for 20 minutes, or until cheese is melted and bubbly.
  9. Garnish with fresh cilantro if desired. Serve warm.

Notes

  • You can substitute ground chicken or beef if preferred.
  • Use whole wheat tortillas for a healthier option.
  • Top with avocado, sour cream, or salsa for added flavor.
